The Bakers’ ABC: K is for Koumiss

A fermented liquid, made in Tartary for mares’ milk. A spirit called ‘rack’ is distilled from koumiss. It is stated that a fermented liquor like koumiss was at one time made from cows’ milk in Orkney and Shetlands Islands.
