The Bakers’ ABC: V is for Ventze degree

When a sugar solution is examined in the polariscope and the sugar content is read off direct on a suitable scale, the figure is called Ventze degrees. The unit of measurement is 100, and this is the sugar density when 26.048gm of cane sugar are dissolved in 100c of solution examined in a 200ml tube.
